[Thai Food] Moo Rha : Fermented Pork

Ataya ~ "Hello there, I tried to make Moo Rha or fermented pork. It's easy menu that you can do at home. Let's see ..."


1. Gathering all ingredients.As describe below.

  • Streaky Pork (腹豚肉) about 500 gram ~ 60 Baht
  • Rice () 1/2 cup ~ 10 Baht
  • Kaffir lime leaves (カフィアライムの葉)  3-4 Leaves~ 1 Baht 
  • Seasoning(調味料)[salt(塩)] ~  2 Baht
Total cost = 73 Baht



2. First roasting rice with Kaffir lime leaves until the rice was turning little bit brown.

3. Then put roasted rice into mortar and smash them well.



4. Add salt and smashed roasted rice to the pieces of streaky pork.




5. Mix them well. Close container and place them in room temperature for about 2-3 days to let fermentation processing.



6. Finally, You can cook them by deep fry or stir fry as you wish. Yum Yum !!!

Homemade #DURIAN #DONUT

Ataya ~ "It's Durian Time !! the most smelliest and delicious  fruit. You're gonna love or hate it. Anyway, I just got a new donut maker machine. So, Let's try making Durian Donut !! "

1. Gathering all ingredients.As describe below.

  • Durian (ドリアン) about 500 gram ~ 90 Baht
  • Wheat Flour (小麦粉) 1/2 cup ~ 10 Baht
  • Egg(玉子) 1 egg ~ 5 Baht
  • Coconut Milk (ココナツミルク) 1/3 cup ~ 5 Baht 
  • Seasoning(調味料)[salt(塩),sugar(砂糖) ] ~  3 Baht
Total cost = 113 Baht


2. Squeeze durian as hard as you can. Mixed egg, coconut milk and add little bit of sugar and salt. Then add durian and wheat flour. Stir it well.



3. Pour the cream into donut maker machine. Close the gap and wait until it done.


4. That is !! Enjoy your Durian Donut Time !!!

#WATERMELON Rind Pickles

Ataya ~ "It's summer time !! Watermelon was on sale and I ate a lot of it. This is the way to made pickle from watermelon rind. Let's see ... "

1. Gathering all ingredients.As describe below.
  • Watermelon Rind (スイカの皮) 1/2 watermelon ~ 0 Baht
  • Sugar (砂糖) 1/2 cup ~ 5 Baht 
  • Salt(塩) 2-3 table spoons ~ 2 Baht
Total cost = 7 Baht


2. Clean up watermelon rind. Get off the watermelon mesocarp that left over. 

3. Peel off the green part.

4. Wash them with clean water.

5. Add them to close container, add salt and sugar into hot water then pour syrup into a container. Keep it on room temperature for about 3-4 days.

6. Here it is !! Watermelon rind pickles !!

#WATERMELON Rind Preserve

Ataya ~ "Did you know that watermelon rind has good benefit for your health. So, I made my own preserve watermelon to eat as a sweet. Let's see ..."

1. Gathering all ingredients.As describe below.

  • Watermelon Rind (スイカの皮) 1/2 watermelon ~ 0 Baht
  • Sugar (砂糖) 1/2 cup ~ 5 Baht 
  • Palm Sugar (パームシュガー) 2 table spoons  ~ 10 Baht
  • Seasoning(調味料)[salt(塩),cinnamon(シナモン)] ~ 1 Baht 
Total cost = 16 Baht


2. Clean up watermelon rind. Get off the watermelon mesocarp that left over. 

3. Peel off the green part.

4. Boiling the rind until it turned clear. Remove the rind and let it dry.


5. Boiling water, sugar, palm sugar and little bit of salt and cinnamon. 

6. Add the rind back and keep stir until it turned candy.

7. Keep the watermelon rind in open container and wait until it dried. 

8. Finally , Put it in close container and keep it in cool place. Enjoy !!

#THAISWEET Sampanee

Ataya ~"Hello Everyone !! Today I will show you how to make classic Thai sweet called Sampanee. Let's see ..."

1. Gathering all ingredients. As describe below.

  • Rice Flour (米粉) about 2 cup ~ 10 Baht 
  • Coconut Milk  (ココナツミルク) 1 cup ~ 20 Baht
  • Palm Sugar (ヤシの砂糖) 3-5 table spoons ~ 10 Baht
  • Flower Aroma Incense (タイお菓子ようのインセンス) ~1 Baht
 Total cost = 41 Baht


2. Stir fry rice flour until it become lighter.




3.  Keep it in container, Smoke it with Thai flower aroma incense for about 1-2 hours.


4. Meanwhile boiling coconut milk and palm sugar.




5. Keep stir until coconut milk became thick like condense milk.

6. Pour coconut milk into bowls. Add some food color if you want and wait until it cool down.



7. Then add aroma rice flour into it and mixing it well.




8. Put them into mold, take it off the mold and smoke them again for about 1-2 hours.


 
9. That is !! now you got classic Thai sweet, Sampanee

Homemade Cottage #cheese

Ataya ~"Hi everyone !! Today I will show you how to make very easy cottage cheese. It's so healthy and simple. Let's see ... "

1. Gathering all ingredients. As describe below.

  • Milk (ミルク) about 1 cup ~ 10 Baht 
  • Lime Juice  (レモン) 3-5 table spoon ~ 10 Baht
  • Seasoning(調味料)[salt())] ~ 1 Baht 
Total cost = 21 Baht


2. Begin with warming up milk with low heat. 

3. While waiting for hot milk just get some lime juice.


4. When seeing some bubbles floating then turn off the heat. Wait until milk got warm temperature then add lime juice into it and stir well.

5. Then you will get curds just like this.


6. Separate curds and water by using cheesecloth.

7. Now you got cheese curd and whey water ( just add some sugar into whey water and you will get lime flavoured whey drinking water !!)

8. The cheese itself has no flavour. So, we add a little bit of salt for better taste.


9. That is. Enjoy your healthy cottage cheese !!
